I absolutely adore this smoothie for it’s simplicity and bold flavour.
One day, I look forward to eating ripe banana’s and pineapple right off the tree from some wonderful tropical location. Rather than missing out on today while I dream about tomorrow, I choose to thoroughly enjoy each and every moment eating ripe banana’s and pineapple with my family in our off-grid home in the Prairies…during winter!
When you live in a northern climate like we do, you don’t have access to an abundance of fresh fruits and vegetables year round. I used to plan a meal, then go to the grocery store to purchase all my ingredients but living in the country means that I need to be a bit more thoughtful about my menu choices. I am learning to love the challenge of making creative meals with just a few ingredients. That is where this smoothie came to being. Throughout the year, whenever fruit is in season (that’s usually when it is a better price) I stock up buying multiples or even cases at a time, clean, chop, can or freeze for use enjoyment in the winter months.
This is a fantastic smoothie to serve guests as it is punchy and so very delish! You can use coconut water and a little less coconut milk for a lighter fat-free option without compromising on flavour.
Coconut Breeze Smootie
1 c. pineapple chunks
1/2 tsp vanilla, ground
1/2 c. coconut milk
Place the above ingredients in a blender, multiply the recipe as needed, blend, serve and enjoy!
A couple of years ago we switched from liquid vanilla to ground vanilla due to gluten intollerances in our family. I don’t think I could ever go back! The flavour is out of this world bold and punchy. I buy my vanilla here and I’ve enjoyed the Madagascar and Bourbon varieties. I usually buy bulk with a friend (who’s family is also Celiac friendly) to save on shipping. It is well worth every penny and ground vanilla lasts twice as long since you need half the amount in any recipe requesting liquid vanilla. Considere this fair warning – once you try it – you’ll be spoiled for anything else!
